At Eleni’s, our Greek-style pan pizza isn’t like anything you’ll find at a typical Sarasota pizzeria. The dough is proofed for 24 hours in olive oil, then baked in a seasoned pan until the bottom turns golden and crispy — almost pan-fried. The result is a crust that’s light inside, crunchy outside, and absolutely packed with flavor.
This style of pizza originated in Greek-owned pizzerias across New England in the 1960s and 70s. Eleni’s family brought these recipes south to Sarasota in 2004, and we’ve been making it the same way ever since — no shortcuts, no compromises.
